Ingredients

  • 1 onion, chopped
  • 2 teaspoons minced garlic
  • 1 red bell pepper, chopped
  • 1 cup fresh sliced mushrooms
  • 1 tomato, seeded and chopped
  • 2 carrots, chopped
  • 2 pounds ground chicken
  • 1 egg
  • 1/2 cup fresh bread crumbs
  • 1 tablespoon Old Bay ™ Seasoning
  • kosher salt to taste
  • black pepper to taste

Directions

  1. Preheat an outdoor grill for medium heat and lightly oil grate.
  2. Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion with the garlic first, then the bell pepper, then the mushrooms, tomatoes and carrots, all to desired tenderness. Set aside and allow all vegetables to cool completely.
  3. In a large bowl, combine the chicken and vegetables. Add the egg, bread crumbs and seasonings to taste. Mix all together well and form into 8 patties.
  4. Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.

Grilled Fruit Crisp

    cups thinly sliced peeled peaches
  • 1
    ounce can pineapple tidbits, undrained (juice pack)
  • 2
    tablespoons brown sugar
  • 1
    teaspoon quick-cooking tapioca
  • 1/2
    cup quick-cooking oats
  • 1/4
    cup packed brown sugar
  • 1/4
    cup all-purpose flour
  • 1/2
    teaspoon ground cinnamon
  • 1/8
    teaspoon ground nutmeg
  • 2
    tablespoons butter or margarine
  • Ice cream (optional)


    directions

    1.Combine the peaches, pineapple, the 2 tablespoons brown sugar, and tapioca in a medium bowl. Spoon into an 8x8x2-inch metal baking or foil pan; set aside.

    2.Combine the oats, the 1/4 cup brown sugar, flour, cinnamon, and nutmeg in another bowl. Cut in butter or margarine until mixture resembles coarse crumbs; sprinkle over fruit mixture. Cover pan tightly with foil.

    3.Grill about 50 minutes or until mixture is hot and bubbly. Serve warm, with ice cream, if desired. Makes 8 servings.

ingredients

- 500 gm Minced Meat

- 1 tbsp Cilantro

- 1 tsp Garam Masala Powder

- 1 tsp Ginger

- 1 tsp chopped Green Chili

- 1 tbsp Cooking Oil

- Salt to taste

Directions

1. Squeeze mutton mince in a dry cloth to remove excess water.

2. Mix all the above ingredients except oil. Kneed well

3. Divide into 8 equal portions and make balls.

4. Spread the minced balls on to the skewers, using a wet hand. Press evenly to get kabobs of six inches length.

5. Roast in a pre-heated oven (175 c) for 15 minutes.

6. Baste with oil and again roast for 2 minutes.

7. Note: for seekh kabobs, use mince meat which has been passed through a mixer twice.

- 1 Inch piece Ginger
 
- 4 Cloves
 
- 3 Green Chili

- As reqd for busting Butter
 
- 1 Large Onion

Directions

1. Wash and cut the boneless chicken breasts into 2 inch pieces.

2. Grind ginger, garlic, green chilies, onions and red chilies and mix with yogurt and salt.

3. Marinate the chicken pieces in the above mixture and keep for 2 hours.

4. Arrange the chicken pieces on a skewer and cook on a charcoal grill, basting frequently and turning till done.

5. Serve hot garnished with onion rings, cucumber slices and lemon pieces.

Directions

1. Cut the meat into small cubes.

2. Grind all the ingredients from ginger to yogurt and marinate the meat in the mixture for about an hour.

3. Stick the meat onto skewers and grill on charcoal fired grill basting with butter and turning till done. This can also be done in a conventional oven.

4. Serve hot garnished with sliced onions.
